INGREDIENTS
- 50 gr. of bitter almonds
- 50 gr. of sweet almonds
- 300 gr. of granulated sugar
- 2 egg whites
- 1 pinch of ammonia for cakes
- vanilla extract to taste
- powdered sugar to taste

1 Step
Combine in a mixer the almonds both bitter and sweet, half of the sugar, an egg white, vanilla extract and grind everything.

2 Step
Add the other egg white, the remaining part of granulated sugar, the ammonia for cakes and continue grinding until you get a fine mixture.

3 Step
Transfer the mixture into a sac à poche with a smooth nozzle and create amaretti on a baking sheet lined with baking paper.
